Balsamic Wedges

  • 3 yellow potatoes
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar Balsamic glaze to serve
  1. Preheat oven with oven tray to 180C.
  2. Leaving skin on, prick potatoes both sides with a fork and place in microwave on High for 3 minutes.
  3. This starts the cooking process.
  4. Allow potatoes to cool down slightly and cut each potato into 8 wedges.
  5. Whisk olive oil and balsamic vinegar together like making a dressing. Add wedges and toss until well coated.
  6. Place baking paper on tray and arrange wedges on baking paper. Take care to spread evenly apart.
  7. Roast for 40 minutes or until golden brown.
  8. Serve dressed with a squeeze of balsamic glaze.


Preheat oven with tray before adding potatoes. A hot tray will ensure even cooking and crisp the underside of the potatoes.
