- Slowly pre heat a frying pan and oil to low heat.
- Grate potatoes straight into frying pan and make a 5 cm hole in the middle.
- Slowly fry potato 5 minutes per side or until golden brown on the edges, season with rosemary, salt and pepper.
- Crack an egg in the middle, cover with a lid and cook for another 4 minutes, depending how you like your eggs.
- Serve at once.
