  • 1 large blue potato, skin on, thinly sliced into 1mm slices
  • Oil spray
  • 1 microwave safe dish lined with baking paper
  • Sea salt & white pepper
  • Thinly slice potato with the skin on, best to use a mandolin type slicer.

  • Lightly spray lined dish with oil spray and evenly lay sliced potato side by side around the plate. Season with salt.

  • Microwave on high for 3 minutes.

  • Remove to cool for 1 minute then return to the microwave for another 3 minutes or until just golden brown.

  • Season with white pepper.

  • Note: Store in air tight container for up to 5 days.

A mandolin is best to slice the potato.
