Mash Potato With
Herb & Garlic

  • 6 medium size potatoes peeled and diced.
  • 4 tbsp olive oil
  • 3 garlic cloves crushed
  • 1/4 cup roughly chopped parsley or chives
  • 1/4 cup warm milk
  • Sea salt & white pepper
  1. Steam or boil diced potato for 20 minutes in lightly salted water.
  2. Combine olive oil, crushed garlic and parsley, microwave for 30 seconds. Set aside.
  3. Strain cooked potato through a colander and allow to steam dry for 4 minutes.
  4. Return potato to saucepan set on a low heat and mash potato with a masher until crushed then use a wooden cooks spoon, beat vigorously until smooth.
  5. Remove from heat. Add herb and garlic infused olive oil and season to taste.
Save time and leave the skin on!
