- Heat oven and oven pan to 200°C.
- Cut potatoes lengthways into 1cm thick slices.
- Remove hot tray, line with baking paper and bake potatoes for 15 minutes. Remove from oven.
- Spread with tomato paste, then ricotta cheese.
- Top with capsicum, herbs and parmesan cheese. Bake for a further 10 minutes. Serve.
