- Preheat oven to 180c.
- To make custard whisk eggs and sugar together in a small bowl, add cinnamon & nutmeg. In a small pot heat milk, cream and vanilla pod once warm slowly pour over egg mix and stir until combined.
- Butter bread on both sides, cut into random pieces and layer in a 8 inch baking dish while randomly scattering craisins and apples.
- Pour over custard mixture and allow to stand for 10 minutes. Sprinkle top with brown sugar and place in oven for 30 minutes until golden brown and risen.
- Serve with custard or ice cream as desired.
