Potato Bread & Butter Pudding

  • 1 loaf potato bread
  • 150g butter softened
  • 100g craisins
  • 2 apples, peeled and roughly diced
  • 100g brown sugar
  • 1 tsp ground cinnamon
  • pinch ground nutmeg
  • 65g sugar
  • 250ml cream
  • 250ml milk
  • 1 vanilla pod
  • 2 eggs
  1. Preheat oven to 180c.
  2. To make custard whisk eggs and sugar together in a small bowl, add cinnamon & nutmeg. In a small pot heat milk, cream and vanilla pod once warm slowly pour over egg mix and stir until combined.
  3. Butter bread on both sides, cut into random pieces and layer in a 8 inch baking dish while randomly scattering craisins and apples.
  4. Pour over custard mixture and allow to stand for 10 minutes. Sprinkle top with brown sugar and place in oven for 30 minutes until golden brown and risen.
  5. Serve with custard or ice cream as desired.
