- Heat oil in a heavy based fry pan until hot.
- Layer potatoes in pan and cook over a medium to high heat, flipping over potatoes until just crispy (not all potatoes will be crispy but that is ok – some will be nice and soft others crisp).
- Add bacon flipping regularly until cooked.
- Crack in eggs, stir them through the potatoes and this will bind everything together.
- Remove from heat when eggs are cooked.
- Serve and eat well!
