Potato Pizzas

40 minutes
  • 4 medium potatoes
  • 1/2 onion, finely diced
  • 1 clove garlic, crushed
  • 1/4 red capsicum, finely diced
  • 3-4 button mushrooms, finely diced
  • 3 sun-dries tomatoes
  • 2 slices salami, diced
  • Parmesan cheese
  • 1 tbsp fresh herbs
  1. Slice potatoes nearly all the way to the bottom but leave a couple of cms at either end unsliced (also know as hasselback).
  2. Brush with oil, wrap in foil and bake until potatoes are just soft.
  3. Meanwhile, heat oil in pan, fry onions and garlic until slightly caramelised.
  4. Add capsicum, mushrooms and fry for a further two minutes. Add fresh herbs, salami and sun-dried tomatoes.
  5. Fold down foil of baked potatoes and add fried ingredients between slices. Top with parmesan cheese.
  6. Bake for a further few minutes until cheese is golden.
  7. Enjoy!
