- Steam whole royal blue potatoes for 18 minutes.
- Leave in the fridge to cool.
- Cut potatoes into 2cm chunks/wedges.
- Fry chips in a deep fryer at 140 degrees for 8 minutes.
- Place into the fridge to cool.
- Fry chips in the deep try again at 190 degrees for 3 & 1/2 minutes.
- Season with sea salt and serve with favourite dipping sauce.
