Toastie Potato Snack

25 minutes
  • 2 whole potatoes, with skin on
  • 1 tbsp finely chopped rosemary (or dried)
  • 1 ttsp parmesan cheese (or cheddar)
  • 1 tsp olive oil
  • Salt to taste
  1. Place whole potatoes in cold salted water and bring to the boil till cooked.
  2. Meanwhile pre-heat sandwich press.
  3. Once potatoes are cooked, drain and pat dry
  4. In a bowl, mix potatoes with rosemary, cheese, salt & olive oil.
  5. Place on sandwich press and press down to break and flatten potatoes.
  6. Cook till crispy and enjoy!

Much of the potatoes nutrients lie just under the skin so keep the skin on when you can.
