- Preheat oven and heavy baking pan to 200°C.
- Leaving skin on, place potatoes whole in mixing bowl and coat with olive oil and salt.
- Remove pan from oven, line with baking paper and evenly place potatoes on pan and bake for 20 minutes.
- Turn potatoes and bake for remaining 10 minutes or until skin is golden brown.
- Season again with salt and pepper in pan and serve.
